Good morning my friends! This weekend, I wanna share an healthy breakfast recipe with you. It’s easy to make, fast, tasty and creative. It’s a way to introduce your family and specially your kids to one of the healthiest vegetables. This vegetable I’m talking about is carrot.
We often don’t appreciate carrot even though it has a lot of benefits for our health. And when it comes to kids, it could be a nightmare to incorporate carrot in their diet.
Not only because of the taste or the texture, it was not introduced to us in a fun way. We almost think of it as medicine… Something that the doctor thinks is good for any kind of deficiency we may have.
In reality, carrot wasn’t fun at all our entire time but some recipes could change our mine!!!
This recipe reveals the deliciousness of carrot and for a first thing in the morning dish, it’s healthy and tasty enough for us to have it every morning: “The classic pancake carrot”.
Preparation time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
1 1/4 cups of all purpose flour
1/4 cup of sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon of salt
1 1/4 cups buttermilk
2 tablespoons of butter
1 cup of shredded carrots
1/2 tablespoon of cinnamon
Whipped cream( optional)
Step 1- Combine all dry Ingredients in a large bowl. Once you mix everything well, add the buttermilk, the egg, the shredded carrot and whisk until smooth and well blended.
Step 2- In a large skillet over medium heat, add melt 1 tablespoon of butter.
Add about 1/2 cup of the batter to the pan for each pancakes and cook for 2 minutes or until golden brown for each side. Add more butter as needed.
Step 3- Top your pancakes with whipped cream, some butter and maple syrup or additional ingredients (like fruits) as desired and serve hot!
